Stuffed

Yes, I'm stuffed from Thanksgiving Lunch/Dinner. Everything was delicious! As promised here is the recipe for Scalloped Pineapple, sorry about no picture, we were in a hurry to get out the door and I didn't want to take a picture of a dish half gone so...take my word for it, it's great. Bill says it tastes like the best part of a pineapple upside down cake (with out the cake!)

Scalloped Pineapple

3/4 C Butter (softened)
2 C Sugar
3 Eggs (Beaten)
4 C Bread Crumbs (about 8 slices of bread)
2 Tbs Milk
1 20 oz. Can Crushed Pineapple

  1. Cream Sugar and Butter until fluffy
  2. Add beaten Eggs
  3. Sprinkle Milk over Breadcrumbs
  4. Fold in Breadcrumbs and Pineapple
  5. Pour into casserole dish and bake at 350 degrees for 1 hour.
  6. Edges should be brown and center a light golden brown.
